The Bucatini Amatriciana was originally cooked in the Italian town of Amatrice when travelling sheperds arrived to sell their dairy products. Word spread fast and it became a Roman trattoria staple.
We still use Bucatini in this dish today, staying faithful to the original ingredients. This pasta is a lot like spaghetti, but with a hole in the middle, meaning every bite soaks up as much sauce as possible.
